As promised, we're sharing our favorite holiday recipes that are perfect for getting cozy or serving at a party. First up is this decadent and SO EASY caramelized banana dish with warm seasonal spices and sticky, toasted coconut.
Free from peanuts, tree nuts (excluding coconut), dairy, soy, wheat, fish and shellfish
1/4 cup large coconut flakes, like Edward and Sons
1/4 tsp cinnamon
1/4 tsp ginger
a pinch of ground clove
1 tbsp. organic honey
1 tbsp. coconut or vegetable oil
Heat a nonstick pan and toss in the coconut. Toast it until it's lightly browned, then toss and toast the other side. Transfer to a bowl as soon as both sides are gently browned. Add the spices and honey and mix it all together until it forms little clusters. Set aside.
Heat the oil in a nonstick pan. Slice the bananas in half lengthwise and place them into the hot pan, inside down. Flip them after a few minutes. They should be golden, caramelized, and sticky. As soon as they are caramelized to your liking put them on a plate and top with the coconut. Serve immediately.
This recipe serves one but can easily be scaled up to serve many guests.
