I only recently had my first donut ever and it was a magical experience.
I'm recipe testing for my new book, Everyone's Welcome (coming spring 2019), and decided that I must have a recipe for allergy-friendly donuts! So I've been busily frying away in my kitchen to come up with the best possible version. First, of course, I had to explore my roots and try an Italian style donut called ciambelle. I'm drawn to anything involving olive oil; I could bathe in the stuff. No surprise that I loved it! Some variation of this recipe will appear in Everyone's Welcome, but for now here's a sneak peek. And if you're familiar with EAF recipes you'll know that I based this off of our basic bread recipe!
2 1/2 cups all purpose flour
1 1/2 tsp dry yeast
1 cup warm water
1 tbsp coconut oil or olive oil
1 tsp salt
1/4 cup powdered sugar
1 1/2 - 2 cups of olive oil for frying
1 cup Enjoy Life chocolate chunks or mini chips
1 tsp coconut oil
Free from peanuts, tree nuts (excluding coconut), dairy, egg, soy, fish/shellfish, sesame
Mix all the dry ingredients together. Combine the yeast and warm water in a separate bowl. When the yeast is puffy pour the water and yeast, and the oil, in with the dry ingredients and mix until it comes together into a ball of dough. Knead until the dough is smooth.
Use some olive oil to grease a large mixing bowl. Place the dough in the greased bowl and cover with plastic wrap. Let it rise for an hour or until doubled in size. Then, punch the centre of the dough (literally, punch it), and turn it out onto a floured surface. Roll it out and use a drinking glass to cut into circles.
Heat the olive oil in a small saucepan until it's bubbling but not boiling. Drop in a little test piece of dough and if bubbles start vigorously forming around it (without it burning), it's the right temperature. Fry the donuts 2 at a time to avoid over-crowding the pan, then transfer to a paper towel to soak up excess oil. You'll know they're cooked when they turn golden brown.
For the topping, melt the chocolate and coconut oil and mix until smooth. Dip the donuts in one by one and serve nice and warm!
