Peaches and Greens Summer Salad

I’m on a roll with amazing dairy free, nut free summer salad inspo!

This salad is so simple to create. Make it for yourself for any meal of the day, or serve it to guests because it’s just so beautiful.

Peanut free, nut free, dairy free, soy free, egg free, wheat and gluten free, fish and shellfish free

Ingredients for Peaches and Greens Summer Salad

  • 3 handfuls of baby arugula

  • 1/2 cup raw zoodles

  • 3 slices of prosciutto

  • 1/2 an avocado, sliced

  • 1 peach, sliced

  • 8 - 10 black olives

  • 1 tbsp balsamic vinegar

  • 3 tbsp olive oil

  • 1 tsp honey

  • salt and pepper to taste

  • a few fresh basil leaves to taste

How to make Peaches and Greens Summer Salad

  1. Spread the baby arugula out on a dinner plate. Pile the zoodles, avocado, and prosciutto into their own sections of the plate on top of the greens. Sprinkle the peach slices and olives around on top. Whisk the balsamic vinegar, olive oil, honey, salt, and pepper in a small bowl and pour over top. Add a few fresh basil leaves to taste.
