Artichoke Dip (Dairy Free, Nut Free)

Creamy and flavorful artichoke dip that’s dairy free! Very simple to prepare, and a great way to use tender little artichokes.

Ingredients for Artichoke Dip (Dairy Free, Nut Free)

  • 1 1/2 tbsp roasted garlic

  • 3 cups cleaned baby artichokes (tips, woody outer leaves, and any interior purple flowers removed)

  • 1/4 cup olive oil, divided

  • 2 tbsp lemon juice

  • 1/3 cup water

  • black pepper to taste

  • sea salt to taste

How to make Artichoke Dip (Dairy Free, Nut Free)

  1. First prepare the roasted garlic. Wrap it in foil and roast at 375F for an hour, or until creamy and golden.

  2. Slice the cleaned artichokes into halves. Add to a pan with 2 tbsp of the oil and saute on medium heat for about 10 minutes, or until golden brown. Add the lemon juice and water and turn down to medium low heat. Let the artichokes soften for about 10 minutes. Season with salt and pepper. Add to the food processor with the roasted garlic and remaining olive oil. Puree until smooth. Season with salt and pepper to taste.
