Why rice milk?

Rice milk contains starch that naturally binds and thickens. When added to the tomato sauce, it instantly makes it thicker and creamier. The addition of pasta water makes the sauce more silky and smooth. The generous amount of olive oil in this recipe contributes richness and fattiness, which are qualities that rice milk is lacking in as it is a thin liquid. Together, olive oil, rice milk, and pasta water create a mouth feel that may be reminiscent of a traditional rose pink sauce.

Ingredients for Dairy Free Rosé Pink Sauce

  • 3 tbsp. olive oil

  • 2 tsp chopped garlic

  • 1 1/2 cups passata (pulpy tomato)

  • 1/2 cup unsweetened rice milk (don’t use vanilla rice milk!)

  • 1/3 cup pasta water

  • 2 servings cooked pasta

  • a handful of fresh parsley, roughly chopped

  • 2 servings of cooked penne

  • salt and pepper to taste

How to make Dairy Free Rosé Pink Sauce

  1. Add the olive oil and garlic to a medium sized pot or saucepan and heat until the garlic smells fragrant. This should take about a minute.

  2. Add the passata and stir well. Season with salt and pepper to taste. Turn the heat to low and simmer for about 45 minutes. It should be reduced and darker in colour.

  3. Add the rice milk and pasta water and mix well. Season again with salt to taste. Allow the sauce to cook on medium heat for a few minutes, then add in the pasta and toss well.

  4. Sprinkle the fresh parsley on top and then it is ready to serve.
