Creamy Butternut Squash Pasta - Dairy Free, Nut Free

An incredibly delicious dairy free cream sauce!

Creamy pastas can be difficult to achieve when cooking without dairy or nuts. Milk or cheese based sauces are out, as are nut-based sauce like creamed cashews. But I’ve never been able to eat any of those things anyways! Due to an allergic reaction to a plant-based cheese as a kid, I have never been able to stomach vegan cheeses. I make my creamy pasta with an oat milk and butternut squash sauce. It’s creamy and simple, silky smooth and rich. In comparison to other plant based mylks, I prefer oat milk for this recipe because it contributes savory flavor to the dish without overpowering the other ingredients. You can use store bought or homemade oat milk for this recipe. My video tutorial on how to make oat milk is at the bottom of this post.

Ingredients for Creamy Butternut Squash Pasta - Dairy Free

  • 3 cups peeled and diced butternut squash (1/2 inch dice)

  • 4 tbsp. olive oil, divided

  • 3 cloves, or 1 tbsp. chopped garlic

  • 3/4 cup oat milk

  • 1/4 cup pasta water

  • 2 servings cooked linguine (100g dry linguine)

  • 20 g fresh mint leaves (about 3 sprigs of mint)

  • sea salt and black pepper to taste

How to make Creamy Butternut Squash Pasta - Dairy Free

  1. Preheat the oven to 400F and line a baking sheet with a Silpat mat or parchment paper.

  2. Peel and dice the squash, then spread it out on the lined baking sheet. Drizzle 2 tbsp. of olive oil on top and season with salt and pepper. Roast for 35 minutes, or until the squash is cooked and the edges are browned. Once the squash is cooked, set it aside.

  3. Boil the pasta. Once the pasta is in the water, move on to assembling the sauce.

  4. Add the remaining 2 tbsp. of olive oil to a medium pan along with the garlic, and heat just until you can smell the garlic aroma. Add the cooked squash and turn the heat down to low. Add the cooked pasta, pasta water, and oat milk, and toss well. Season with salt and pepper. Add the mint leaves and toss.

Serves 2 (or 1, if you are very hungry)
