Tips for making this Berries and Cream No Bake Pie: 

  • Buy full fat coconut milk and put the cans in the fridge overnight. The coconut fat needs to be fully hardened in order to create a frothy mousse. 

  • Scoop off the hardened fat from the cans of coconut milk, and leave the coconut water behind as it is not needed in this recipe. But save the coconut water for other recipes such as smoothies or coconut rice. 

  • Run your knife through hot water and then dry it off on a kitchen towel to make slicing easier.

Ingredients for Berries and Cream No Bake Pie - Dairy Free, Egg Free, Nut and Peanut Free, Gluten Free, Soy Free (contains coconut) 

  • 130g or 1 1/4 cups of graham cracker crumbs (traditional graham crackers or gluten free graham crackers) 

  • 2 tbsp. coconut oil or your preferred allergy safe dairy free butter 

  • 3 1/2 cups of cold coconut cream – chilled in the fridge overnight until solid 

  • 2 tsp pure vanilla extract 

  • 1 jar of Healthy Crunch Chia Jam, divided 

  • Berries for serving and fresh mint for garnish 

How to make Berries and Cream No Bake Pie - Dairy Free, Egg Free, Nut and Peanut Free, Gluten Free, Soy Free (contains coconut) 

  1. Add the graham crackers to a food processor and pulse until they are fine and powdery. Add the coconut oil and pulse until the mixture resembles wet sand.  

  2. Line a square 8 inch cake pan with plastic wrap or parchment paper. Press the graham cracker crust mixture evenly and firmly into the bottom of the pan. Set aside. 

  3. Add the coconut cream and vanilla extract to a food processor and pulse until it is creamy and smooth. Remove 1/3 of the mixture and dollop it onto the crust. Set aside. 

  4. Add ½ the jar of Healthy Crunch Chia Jam (your choice of flavor) to the food processor and pulse until it is smooth. Spoon this mixture into the pie crust. Swirl the plain and jam-flavored coconut cream together, then smooth out the top with a knife. Wrap the top with plastic wrap, then place the pie in the freezer for at least 3 hours to set, then transfer to the fridge for an hour.  

  5. To serve, either cut the pie into squares or use a spoon to scoop it out for a more undone and casual serving style. Spoon the remaining ½ jar of Healthy Crunch Chia Jam on top of each serving. Add fresh berries and a sprig of mint.
