Yummy Chocolate Coconut Scone (Video)

Ingredients
2 cups all-purpose flour
1 tbsp sugar
3 heaping tbsp baking powder
a pinch of salt
3 heaping tbsp Earth Balance Organic Whipped Spread
3/4 cup + 1 tbsp coconut milk (Read the label! Use the pure stuff!)
a handful of Enjoy Life chocolate chunks

Method
- Mix the dry ingredients well and add the Earth Balance, mashing with a fork until it forms small pea-sized lumps
- Add the coconut milk and mix until well combined
- Knead ten times to form nice layers in the dough
- Mash in the chocolate chunks and form into a disc
- Place the dough on a tray lined with parchment paper
- Baste with egg wash if desired, then cut the dough into wedges
- Bake at 410F for 10 minutes, then remove and separate the wedges slightly. Put back in the oven and bake for another 5 - 7 minutes

Serve warm!
