Let's get this out of the way; I'm not doing terribly well with what I'm now calling my "aspirational" low acid diet. My acid re-flux has gone down considerably and I have only had one episode of GERD in the last few weeks!
I am a terrible person when I haven't had a coffee in bed, before I've even woken up.
It's impossible to not eat tomatoes when you are Italian.
Lemon is just so damn good.
It's also impossible to not eat garlic, if you enjoy food with flavor at all.
Not eating for 3 - 4 hours before bed is very difficult when you're accustomed to having dinner at 10 pm, but we're actively working to change that.
My morning scoop of sauerkraut routine (have been doing this for almost 15 years now) is a win for gut health. I've recently started eating a new brand called Moishes and it's insanely delicious! Trying this "diet" has led me to do more research about low acid foods and gut health, and I learned that kraut from the refrigerated section of the grocery store has more probiotics than the ones on the shelf. I've learned that it's not just about eating less acidic foods, but about eating more foods with bacterial cultures which make the stomach happy.
I want to introduce onion back into my diet, so a couple days ago I sliced some shallots very thinly and pickled them in apple cider vinegar and salt. Fingers crossed that the pickling process makes them easier on my stomach and doesn't give me acid re-flux.
I've also been working on becoming a calmer person, and not aggravating myself with stress. This is possibly the most difficult part!
