Crispy, Crunchy, Smooth, and HEALTHY

We're in the mood for some damn good food. 

Lately we've been watching a lot of the Food Network and when one does so, it's difficult not to develop cravings for everything deep fried, smothered in sauces,  and exploding with fat and flavor. Seeing as we don't do cheese, and avoid deep fried foods in 99% of restaurants due to cross-contamination, we decided to develop our own healthy junk food recipe to satisfy those cravings. Here's our simple and easy recipe.

Free from dairy, nuts, peanuts, egg, soy, oats, wheat, fish and shellfish

Crispy
Take a thin, boneless pork chop and brush with olive oil on each side. Season well with coarse salt and black pepper. Heat some vegetable oil or olive oil in a non-stick pan and sear the chop until crisp and golden brown on each side. Cut into cubes and set aside.

Peel and boil about a handful of small Yukon Gold potatoes. Once boiled, strain, pat dry with paper towel, and then add to the pan that the pork was fried in. Make sure it's nice and hot! Give them a fry until nice and crispy. 

Crunchy
Gather some endive leaves; they're perfect for dipping and scooping. You'll also need some radishes, sliced, and green string beans cut into small segments. 

Smooth
This sauce is so simple you won't even believe it. Add 1/4 cup of pure, unsweetened coconut milk to a blender along with 2 handfuls of spinach, the juice of one lime, and salt. Blend it up until very smooth.

Assemble
Pile the pork cubes and potatoes into the centre of a bowl. Pour a generous amount of the sauce around it. Then drop in some radish slices, green beans, and finally stick some endive leaves in the side for dipping and scooping. I've added some fennel greens to mine because I had them on hand.
