Mrs. Weasley's Magically Easy Fudge

The new Harry Potter book, The Cursed Child, is releasing this weekend! To celebrate this event I whipped up a batch of my rendition of Mrs. Weasley's Magically Easy Fudge. My recipe is half brownie, half fudge, 100% delicious and easy. Nutty-tasting Sunbutter sits on top, and chewy, fudgey chocolate forms the body of the dessert. 

Free from dairy, nuts, peanuts, fish, shellfish, citrus, mustard

Ingredients
1 1/2 cups Enjoy Life chocolate chips or mini chips
1/2 tsp pure vanilla extract
a pinch of salt
1/2 cup Earth Balance Organic Whipped Buttery Spread
1/3 cup sugar
2 large eggs (I use brown, free run eggs)
3/4 cups all-purpose flour
3 tbsp.

 

Method

Preheat the oven to 350F and line a square baking pan with parchment paper.

Melt the chocolate, vanilla, salt, and Earth Balance in a double boiler, stirring until just melted.

Remove from the heat and add the sugar immediately, beating with a whisk until well-combined. Add the eggs, one at a time, whisking til smooth after adding each one. Add the flour and beat well but be sure not to over mix.

Spread the batter out evenly in your lined baking pan and jiggle the sides to smooth out the top. Spread dollops of Sunbutter into three evenly spaced rows. Then use a knife to drag the lines in opposite directions to create a pattern.

Bake for 20 minutes, then allow to cool fully before removing from the pan and cutting into squares. 

Makes 12 squares.
