Ginger Cookies

Free from peanuts, nuts, dairy, egg, soy, fish and shellfish, sesame

1/2 cup lard or coconut oil
1 cup dark brown sugar
1 1/2 tsp ground ginger
1/2 tsp cinnamon
1/4 tsp ground clove
a pinch of salt
1/3 cup unsweetened apple sauce
2 cups flour
1 tsp baking powder
1/2 tsp baking soda

Preheat the oven to 375F and line a baking sheet with parchment paper.

Cream the oil/lard, sugar, spices, salt, and applesauce until smooth. Add the flour, baking powder, and baking soda and mix until well combined. Form the dough into balls and squish down with the palm of your hand. Use a fork to make a mark in the center. Leave about an inch between each cookie on the tray.

Bake for 8 - 10 minutes. Makes 15 - 18 cookies
