The Best Toast Ever

Expanding on the white bread/focaccia recipes from my cookbook, Everyone’s Welcome. This is my absolute favorite way to eat toast. It works best with stale bread, and I actually developed this little routine in order to prevent wasting day old bread. Over time I tweaked it and it became more and more delicious.

Ingredients for The Best Toast Ever

  • 2 slices of bread torn into pieces

  • 3 tbsp. olive oil

  • sea salt to taste

  • 1 tbsp. honey

  • The juice of a mandarin orange or clementine

  • black pepper to taste

  • flaky sea salt to taste

    a sliced pear, any kind of pear

How to make The Best Toast Ever

  1. Tear up the bread. Toss it with the olive oil, salt, and black pepper. Broil in the oven until toasty and crispy. This will differ by oven. In mine, it took about 3 minutes on broil.

  2. Put the toasted bread on a plate along with the sliced pear.

  3. Drizzle the honey over everything. Squeeze the mandarin/clementine on top, concentrating it on the toast. Season with flaky sea salt and black pepper to taste.
