Spiced Sunbutter Cookies
Free from dairy, nuts, peanuts, soy, wheat
3/4 cup dark brown sugar
1 tbsp molasses
1 large egg
1 cup Sunbutter sunflower seed butter
a sprinkle each of ground cinnamon and ginger, and a pinch of ground clove
Preheat oven to 375F and line a baking sheet with parchment paper.
Add all ingredients to a large mixing bowl and beat until well combined. The batter will feel quite sticky. Scoop the batter out about 1 tbsp at a time and form into a ball in your palms. Place the balls on the lined baking sheet about an inch apart, then gently press down with a fork to create a nice pattern on top.
Bake for 8 - 10 minutes or until golden brown on the outside but soft and chewy on the inside.
