Smoked Salmon and Avocado Salad Bowl

The beauty of this salad is all in how you arrange the ingredients. I like to spend time laying things out nicely before I eat when I have the time. It's a very quick salad that's healthy, nutritious, and full of fresh flavors. It also packs well as a lunch for work. Just rub the lemon on the avocado before you seal it up to prevent browning.

Free from peanuts, nuts, dairy, egg, soy, wheat, shellfish

Ingredients
2 heads of little gem lettuce, leaves separated
2 slices of lemon
3 or 4 cornichons, or your favorite pickle *remember to read the label before consumption as ingredients vary by brand
about 8 thin slices of cucumber
1 tbsp. chopped red onion
1 tsp capers
1/2 an avocado
1 tbsp. shelled hemp seeds
a few fronds of dill
1 tbsp. olive oil
1 strawberry, sliced

Spread the little gem lettuce out in a bowl and drizzle with olive oil. You may not need the full tbsp. Fan the cucumber slices out in one corner. Scoop the avocado out in one clean motion, then sprinkle the hemp seeds over top before placing it on the lettuce. Delicately fold the salmon into the opposite corner. Pile the cornichons next to the salmon. Sprinkle the capers, red onion, and dill over the salmon. lay the lemon slices and strawberry in the remaining gap.
