Perfectly Easy Banana Bread
Free from dairy, nuts, peanuts, mustard, oats, egg, sesame, fish, shellfish
1/2 cup shortening
1 tsp pure vanilla extract
1 cup cane sugar (or white sugar)
1/2 cup brown sugar
1 cup unsweetened applesauce
2 cups mashed ripe banana
3 1/3 cups all-purpose flour
4 tsp baking powder
3 tsp. baking soda
a pinch of salt
Pre-heat the oven to 350F and line 3 medium sized loaf pans with parchment paper.
In a large bowl cream the shortening and sugars until smooth. Add the vanilla, applesauce, and mashed banana and beat well. Add all the dry ingredients at once and mix until well-combined, but don't over mix. The batter should have a lot of air bubbles.
Spoon the batter equally into each loaf pan and bake for approximately half an hour, or until a toothpick inserted into the centre comes out clean.
This bread freezes really well so I like to portion it out for breakfasts and freeze individually.
