Vegan Summer Cesar Salad

My recipe for Vegan Summer Cesar salad is bright and fresh, and safe for those with an egg and dairy allergy too! 

Free from peanuts, tree nuts, dairy, egg, soy, wheat, fish and shellfish
Suitable for vegans, vegetarians
Gluten-free

Avocado Cesar Dressing:
1/2 a ripe avocado
1/4 cup olive oil
1/4 cup canola or avocado oil
2 tbsp. apple cider vinegar
1 inch cube of red onion
1 small clove of garlic
sea salt and black pepper to taste

Add all the ingredients to a blender and blend until smooth. Make it right before the salad is ready to be dressed. 

Salad:
1 head of romaine lettuce, chopped
approx. 1 1/2 cups shredded red cabbage
several big handfuls of spinach leaves
2 tbsp. finely diced red onion
1/2 an avocado, cubed
1/4 cup diced strawberries
2 tbsp. Super Seedz Pumpkin Seeds
1 tbsp. shelled hemp or chia seeds

Toss all the ingredients together in a large mixing bowl. Pour the dressing over top and toss until everything is well combined. I like to save the seeds out until the last minute and sprinkle them on top.
