Tuna and Quinoa Salad with Artichokes - Dairy Free

A richly flavoured summer salad filled with mediterranean ingredients, and made with quinoa rather than couscous which would be typical of tabbouleh. Quinoa is gluten free and I absolutely love it. It makes a great base for salads like this one! You might expect to find cheese such as feta in this recipe, but not here on my blog!

Ingredients for Tuna and Quinoa Salad with Artichokes - Dairy Free

  • 1 cup cooked quinoa

  • 1 small tin of tuna (packed in water or olive oil)

  • 2 cups canned or jarred artichoke hearts

  • 2 cups finely chopped parsley

  • 1/2 cup sliced kalamata olives (pitted)

  • 8 sun dried tomatoes, sliced or roughly chopped

  • 1/4 cup lemon juice

  • 2/3 cup olive oil

  • 1 tsp ground black pepper

  • salt to taste

How to make Tuna and Quinoa Salad with Artichokes - Dairy Free

  1. Add all of the ingredients to a mixing bowl and toss well. Season with salt and pepper to taste.

Serves 2
