Easy Arugula Salad

Free from peanuts, nuts, dairy, soy, wheat. If you have a fish allergy omit the tuna

Ingredients

several handfuls of arugula
a few cherry tomatoes
1 avocado
1/4 cup of corn
several basil leaves, torn
drizzle of olive oil, about 1 - 2 tbsp
1 tsp apple cider vinegar, or the juice of half a lemon
sea salt and pepper

optional: tuna packed in olive oil, or prosciutto for protein

Cut the avocado into cubes and slice the tomatoes in half. You can also use heirloom tomatoes if they are in season, just chop them up so they're nice and chunky.

Add all the veggies and greens to a mixing bowl and drizzle with olive oil, vinegar, sea salt, and some freshly ground black pepper. Toss well and serve fresh. Add the protein right before serving.

Makes 2 healthy sized salads
